Dark Chocolate Cobbler

Rich, gooey, and deeply chocolatey, this cobbler creates its own luscious pudding layer as it bakes. Serve it warm with a scoop of vanilla ice cream for the ultimate comfort dessert.

Ingredients:

For the Batter:

  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup sugar
  • 1 1/2 tbsp cocoa powder
  • 2 tbsp butter, melted
  • ½ cup milk
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts (optional)

For the Topping:

  • ¼ cup sugar
  • ½ cup brown sugar
  • ¼ tsp salt
  • 2 tbsp cocoa powder
  • 1 cup boiling water

Instructions:

  1. Prepare the Batter:
    In a medium mixing bowl, whisk together the flour, baking powder, salt, sugar, and cocoa powder. Stir in the melted butter, milk, and vanilla until smooth. Fold in walnuts if using.

  2. Assemble the Cobbler:
    Spread the batter evenly into a greased 1.5-quart casserole dish or an 8x8-inch pan. Set aside.

  3. Add the Topping:
    In a separate bowl, mix together the sugar, brown sugar, salt, and cocoa powder. Sprinkle this dry mixture evenly over the batter—do not stir.

  4. Add Boiling Water:
    Carefully pour the boiling water over the top of everything. Do not stir.

  5. Bake:
    Preheat oven to 350°F (175°C). Bake for 30 minutes, or until the top looks mostly set and cake-like. A rich pudding will form underneath as it bakes.

  6. Serve:
    Scoop out warm servings, making sure to get both the fluffy cake and gooey chocolate sauce. Top with a scoop of ice cream for extra indulgence!
