Dark Chocolate Cobbler

Rich, gooey, and deeply chocolatey, this cobbler creates its own luscious pudding layer as it bakes. Serve it warm with a scoop of vanilla ice cream for the ultimate comfort dessert.
Ingredients:
For the Batter:
- 1 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup sugar
- 1 1/2 tbsp cocoa powder
- 2 tbsp butter, melted
- ½ cup milk
- 1 tsp vanilla extract
- ½ cup chopped walnuts (optional)
For the Topping:
- ¼ cup sugar
- ½ cup brown sugar
- ¼ tsp salt
- 2 tbsp cocoa powder
- 1 cup boiling water

Prepare the Batter:
In a medium mixing bowl, whisk together the flour, baking powder, salt, sugar, and cocoa powder. Stir in the melted butter, milk, and vanilla until smooth. Fold in walnuts if using. -
Assemble the Cobbler:
Spread the batter evenly into a greased 1.5-quart casserole dish or an 8x8-inch pan. Set aside. -
Add the Topping:
In a separate bowl, mix together the sugar, brown sugar, salt, and cocoa powder. Sprinkle this dry mixture evenly over the batter—do not stir. -
Add Boiling Water:
Carefully pour the boiling water over the top of everything. Do not stir. -
Bake:
Preheat oven to 350°F (175°C). Bake for 30 minutes, or until the top looks mostly set and cake-like. A rich pudding will form underneath as it bakes. -
Serve:
Scoop out warm servings, making sure to get both the fluffy cake and gooey chocolate sauce. Top with a scoop of ice cream for extra indulgence!
